A snowy week at the bakery
Hello friends and welcome back! This newsletter is a little delayed this week but we haven’t forgotten about you.
Last week our bakers debuted their version of a bow croissant, filled with a light vanilla cream and roasted apples. You seemed to love it so much we barely had any 20 minutes after they landed on the counter! We will be making these up until Christmas, with different flavours each week of course. This week will feature a juniper cream, one of our favourite flavours here at the bakery. You don’t want to miss this one
Speaking of missing out, this Friday is the last day of our November bread plate; a beautiful oat porridge sourdough loaf, hatcho miso whipped butter, quince gel and vesterhavsost. Our December bread plate debuts on Saturday, and it’s incredible. Imagine a sourdough bread mixed together with rosemary and cranberries, spiced orange marmalade, Søbo cheese from Søtofte and a salty whipped butter. It will definitely ease you into a festive mood.
Also available every weekend is aebleskiver and aeble gløgg. Ours are made with locally grown and milled flour by Quartz Mølle of course, and the gløgg is made from locally grown and pressed apples by Farendløse Møsteri.
We announced yesterday that we will be opening on Tuesdays, which is very exciting. Each week while our bakers were prepping for the week on Tuesdays, a lot of keen customers asked if we were open. With the success of Baby Cafe, which runs every Tuesday 11-13, we decided that opening on Tuesdays would work. Despite only being open 3 hours, we had a lot of customers without babies stopping in for coffee and a treat, so it only makes sense to give the people what they want. The cafe area will continue to be reserved between 11-13 for parents with babies, so please do be mindful.
On our shelves now are a lot of cookies, gift boxes, coffees, flour, olives etc that make great presents or stocking stuffers. They are also delicious to enjoy yourself. In other exciting news, we are receiving our first merch delivery this week, so keep an eye out on socials for the announcement!
What the team is loving:
Currently, Aryan is drinking cardamom lattes, made with our house made cardamom syrup. She says its the perfect winter coffee so you might just have to try it.
Tash is very into an Earl Grey hot chocolate, coming soon on the limited Christmas drinks menu. It is made with her own tea blend, so you don’t want to miss this one!
Maya can’t get enough of our Tebirkes, but can you blame her?
Veronica is loving our new seasonal cakes, the most recent one being a brown sugar spiced cake, slow roasted apples, quince reduction French buttercream and quince gel.
Vera loves any savoury pastry we make, its the perfect snack or lunch, and changes weekly.
Fintan absolutely loved the roasted apple, sea buckthorn, honey and thyme pastry we made. It’s hard to go wrong with a new combination when it sits on top of a beautiful croissant dough made from his Mariagertoba flour, freshly milled 15 minutes away from the bakery.

Christmas at home
The team has made frozen gingerbread dough for you to take home, and will be making other classic Danish cookie doughs that you can bake at home this week. We will announce them on socials as soon as they are ready so get ready to bake at home!
And lastly, Thursday is the last day for deliveries to Godis Grønt this year, and they wont be back until May next year! Get your orders in by tonight if you want some fresh bread tomorrow. Otherwise, our online shop is always open for you to place orders to pick up at the bakery
